Stuffed Green Peppers

Stuffed Green Peppers make a delicious, inexpensive meal. That actually make great leftovers too!

INGREDIENTS:

4 large green peppers
½ pound ground sausage, turkey or beef; cooked
2 cups chicken stock
1 cup long grain rice, uncooked
1 (1 ¼ ounce) packet taco seasoning
1/3 cup salsa
1/3 cup corn kernels
1 tablespoon butter, divided



DIRECTIONS:
  1. Remove the tops and seeds from the green peppers and set aside.
  2. Bring the chicken stock and taco seasoning to a boil in a medium pot.
  3. Add the rice, salsa and corn to the pot, cover and turn the heat down to low.
  4. Allow to simmer for 20 minutes. Don’t look at it.
  5. Preheat the oven to 350 degrees F.
  6. When rice is done mix in the cooked meat and stuff into the pepper.
  7. Place the peppers in a covered casserole dish, dot with butter and place the pepper tops on top.
  8. Cover and bake for 40 minutes in a preheated oven.
